First, I recommend having at least one life leech imbuement. Second, I recommend maintaining consistent attacks attack consistently to help maintain your health. Third, if you're taking a lot of damage, don't try to block the creatures, just kite.
The type of pot you use will depend on the location you're hunting. In some locations, you'll be able to hunt comfortably using mainly Great Mana Potions; in others, you'll need to use Great Spirit Potions. In emergency situations or more dangerous hunts, you should use Ultimate Spirit Potions. I like to always carry all three types of potions, but obviously, the amount of each type will depend on the respawn you're hunting. If you're trying to hunt with Great Mana Potions during a respawn and find yourself having a hard time maintaining your health, it's a sign you should probably be hunting with Great Spirit Potions (or even Ultimates) in that location.
And of course, you also have the option of hunting with the Virtue of Sustain, if that's more comfortable for you.
