Is possible to track the amount of bosses killed?

I know there is a feature to track how many monsters did you killed on each type. But there is a way to know how many boss did we killed? For example: the Ancient Lion Knight.

If the creature in question is not avaliable in the bestiary, there is no way to track this within the game currently. You can, ofcourse, use something like a excel/google doc to track it.

Not in bestiary but if Your client has turned ON taking screenshoots You can try to count them.
