Are items such as Orshabaal's Brain and Morgaroth's Heart sure to drop each time we kill the bosses?

Asking if it's the same situation as with Ferumbras' Hat. There is always one drop per raid. Does it also happen with bosses mentioned in the question's title?

It drops everytime, but only to one person, not whole team, if you deal most damage, then chances are higher that you will get it, same like Feru hat. On most of the pvp servers, 3 bosses you mentioned are reserved for leading guild.
