As a returning player, it feels terrible to not collect gold coins when hunting, but apparently that's the meta nowadays - or at least that's what I've been told.

The rationale seems to be: the value/weight ratio of gold coins is bad. I get it, but, is it really worth not collecting gold and staying more time hunting instead of collecting gold and just refilling more?

Also, is there a table of value/weight ratio so we could quickly visualize why gold coins are bad?

Gold has ratio of 10.0, but without a gold pouch it goes down to effectively ~9.13

Well now the weight /oz of gold coins are a lot lower so it is worth collecting gold coins again.
