Without a doubt, buy falcon greaves. There aren't many hunting spots where one-handed weapons and a shield are better than two-handed weapons, so the shield isn't very useful. Regarding the amulet, always prefer red plasma, turtle amulet is only effective in hunting areas where the primary damage output is ice.
That being said, the knight's best item is their weapon; always prioritize bis weapons!
