Are there any NPC's that ride a mount?

I know that the orc rider and enraged thorn knight ride a mount, are there any other NPC's or creatures which also fit into this category?

As for now, there are NO NPC's that ride a mount. Here you can check the list of NPC's (Tibia Fandom), none of them has a mount.

Apart of the creature / boss that you mentioned, there are some that ride a mount. Not necessarily a classic mount that players can use, but they ride something:

 Broodrider Inferniarch

Cublarc the Plunderer

Major Timedisplaced Anomaly (Fiehonja) - not really a creature to kill, looks like a brain riding a Walker mount

Mounted Thorn Knight - mentioned by you already

Orc Marauder - looks like Cublarc, there are some colour differences (example: helmet)

Orc Rider - already mentioned by you, riding a War Wolf

Professor Maxxen - same as Major Timedisplaced Anomaly (Fiehonja), brain riding a Walker
