Hi! there! There's no known official or unnoficial website that has a record on Tibia creatures height or weight, other than some of their dead bodies weight. There's also no information about this on the official website or the lore, there's references on the website about the size of certain creatures using words like "large, big, short..." etc, but nothing measurable as their height.
